APPLE-CARROT QUICK BREAD | |
1 1/2 c. apples (2 med.), peeled & shredded 1/2 c. (1 med.) carrot, shredded 1/4 c. butter 1/2 tsp. lemon extract 1 3/4 c. flour 2 eggs 2/3 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped nuts Heat oven to 350 degrees. Grease bottom only of 9"x15" or 8"x4" loaf pan. In large bowl blend first 5 ingredients. Lightly spoon remaining ingredients except nuts. Beat 3 minutes at medium speed. Stir in nuts. Bake 50 to 60 minutes. Remove from pan to cool. |
