EASY CHICKEN PARMESAN | |
3/4 c. seasoned bread crumbs 1/4 c. Parmesan cheese 1 egg, beaten 2 tbsp. olive oil 4 skinless, boneless chicken breast halves, pounded to 1/4" thickness Canned spaghetti sauce 1/4 lb. Mozzarella cheese, grated Combine bread crumbs and Parmesan cheese in a shallow dish or bowl. Dip chicken first in egg, then dredge in bread crumbs. Heat oil in fry pan over medium heat. Cook chicken breasts, turning once, about 5 minutes a side, until lightly browned. Place chicken breasts in baking dish and cover with spaghetti sauce. Top with Mozzarella cheese and cover again with spaghetti sauce. Bake 15 minutes in 350 degree oven until cheese is bubbly. Before serving, sprinkle with Parmesan cheese. |
