WHITE NAVY BEAN SOUP | |
1 lb. dried white navy beans 2 (1 inch) slices smoked ham 1 lg. onion, chopped 2 cloves garlic, minced 2 stalks celery, cut into one inch pieces Salt, black pepper, cayenne pepper to taste 1/2 c. chopped green onion tops (garnish) Wash beans, cover with water two inches over top, soak overnight. Add ham, onion, garlic, celery. bring to a boil, lower heat and simmer until beans are tender (additional water can be added if mixture is too thick). Puree mixture in processor, return to pot and season with salt, black pepper and cayenne pepper. Serve in soup bowls, garnish with green onions tops. |
