SHRIMP FRIED RICE 
2 lbs. shrimp, cooked
2 c. rice, cooked
2 eggs
1/2 c. green onions, chopped
3 tbsp. vegetable oil

Heat oil in a frying pan. Add eggs, beat with fork. Add onion, simmer on low heat a few minutes. Add shrimp and salt and pepper to taste. Cook a few minutes and add rice and soy sauce to taste. Simmer low for 15 minutes. Let stand 10 minutes before serving.
