SALMON FRIED RICE (OR HALIBUT,
ROCKFISH, SHRIMP, CRAB, ETC.)
 
1/2 lb. bacon, chopped
1 c. green pepper, coarsely chopped
1 c. celery, coarsely chopped
1 c. onions, coarsely chopped

Saute vegetables in bacon grease after bacon is fried crisp. Add 2 to 4 cups cooked rice, stir until blended with vegetables, bacon and grease. Add soy sauce to taste. Gently stir in 1 to 2 cups cooked, leftover salmon chunks (skinned and boned).

Delicious! I baked my salmon and added the salmon and juices to the rice. I didn't use celery. I used onion and bell pepper. I'm definitely making this again!
