SHRIMP AND EGG FRIED RICE 
1 egg, beaten
6 shelled shrimp

MIXTURE #1:
1/3 c. diced mushroom
2 tbsp. chopped scallions
3 tbsp. green peas

MIXTURE #2:
1/2 tsp. salt
1/4 tsp. pepper

3 tbsp. oil

Heat the wok and add 3 tablespoons oil. Stir-fry egg until it solidifies. Add #1 and shrimp and stir-fry. Add steamed rice and #2 until the rice is fried. Serves 2.

Method for preparing steamed rice if rice cooker is unavailable. Rinse rice until water runs clear; drain. Put rice and 1 1/2 cup water in saucepan. Bring to boil over high heat. Allow to boil for 1 minute. Cover with tight fitting lid; lower heat for 20 minutes. Turn off heat and let stand for 10 minutes.
