SHRIMP FRIED RICE 
1/2 lb. shrimp, peeled, deveined
2 tsp. cornstarch
1 dash salt
1/2 tsp. sesame oil
1/4 c. cooked diced ham or pork
1/2 c. cooked green peas
2 tsp. chopped green onion
3 to 4 tbsp. oil
1 1/2 c. cold cooked rice
1/2 tsp. salt
1 egg, scrambled, optional

Mix shrimp with mixture of cornstarch, salt and sesame oil. Bring several cups of water to boil, add the marinated shrimp.

As soon as the shrimp turn pink, remove them. Stir-fry onion in oil. Add ham and peas; stir a few seconds, then add rice and shrimp. Season to taste with salt and black pepper. Stir and allow the rice to heat through. Makes 2 servings.
