SHRIMP FRIED RICE 
2 c. chopped cooked shrimp
1/4 c. salad oil
2 eggs, slightly beaten
1 tsp. salt
Freshly ground black pepper
4 c. boiled rice
2 tbsp. soy sauce
3 scallions or green onions, chopped

Saute shrimp in oil for 1 minute. Add eggs, salt and pepper. Fry 5 minutes, stirring frequently. Mix in rice and soy sauce. Continue cooking and stirring 5 more minutes. Garnish with chopped scallions. Makes 6 servings.

NOTE: Diced cooked chicken, pork, or ham may be substituted for shrimp.
