SHRIMP AND RICE CASSEROLE 
1 1/4 lb. shrimp
1/2 lg. onion
1 tbsp. butter
1 can cream of mushroom soup
1/2 tsp. lemon juice
Salt & pepper
1 c. rice, cooked
3/4 to 1 c. cheese, shredded
1/2 green pepper, sliced
Dash of garlic salt
1/2 c. sour cream

Boil and peel shrimp. Saute onion in butter until tender. Make a sauce by adding soup, lemon juice, and seasonings. Fold rice and shrimp into the sauce. Add the sour cream and pour into a greased 1 quart baking dish. Sprinkle cheese on top and garnish with green pepper rings. Bake at 325 degrees for 30 minutes. Makes 6 servings.
