POTATO DUMPLINGS | |
2 c. cooked and riced potatoes 2 tbsp. flour 1 tbsp. melted shortening 1 egg, slightly beaten 1/2 tsp. salt 1/4 tsp. pepper Combine all ingredients thoroughly. Divide into 12 portions and form into balls. Chill. Drop into boiling water for 12 to 15 minutes. Can also drop into boiling stew and cook for 15 minutes in place of potatoes in stew. For a variation 1 1/2 tablespoons chopped chives or 1/8 teaspoon nutmeg can be added to above ingredients or 1 1/2 tablespoons chopped parsley. |
