P.A.M'S GLORIOUS CHICKEN 
6 chicken breasts, halved
1/2 c. olive oil
1 stick butter
Bunch, fresh chopped parsley
1 med. onion, chopped
2 cans beef consomme
3/4 c. tomato juice
1/4 c. cooking sherry
4 tbsp. flour

Brown chicken in oil and butter. Remove to casserole dish. Add flour to oil and butter to start gravy. Add all remaining ingredients. Simmer 15 minutes. Pour mixture over chicken and bake at 275 degrees for 3 hours. Serve with rice, buttered carrots and string beans on a single platter.
