KATH'S YUMMY EASY CHICKEN
TORTILLA SOUP
 
Lots of ingredients, but very good soup and sooo easy! Tweak to your own taste if you want it spicier.

1 (12 oz.) can premium chunk chicken (Swanson)
2 (15 oz. ea.) cans chicken broth
1 onion, chopped
1 red bell pepper, chopped
1 (8 oz.) can tomato sauce
1 (10 oz.) can Rotel tomatoes w/ green chilies
1 (15 oz.) can petite diced tomatoes
1 (8 oz.) bag shredded Velveeta cheese "Shreds"
1 (10 oz.) can nacho cheese soup
1 cup half & half
1 env. taco seasoning

Don't drain chicken. Put everything into a pot and slow simmer for an hour. Stir often.

Note: Sometimes I add more half & half. If you want it thicker, whisk in some Wondra flour.
