NEW SOUTHERN CRACKLIN' BREAD | |
1 cup self-rising cornmeal 2 eggs, slightly beaten 1-8 3/4 oz. can cream style corn 1 cup sour cream 1 cup cracklin' pieces 1/4 cup salad or peanut oil 1 teaspoon salt Preheat oven to 400°F. In medium mixing bowl, combine cornmeal, eggs, corn, sour cream, cracklin', oil, and salt. Mix together well using wire whip or spatula. Pour into a greased 9 x 13 x 2 inch pan or dish. Bake 30-40 minutes or until golden brown. Remove from oven and cool or 5 minutes before cutting into pieces. Carefully lift out with spatula onto hot serving platter. Serves 10-12. |
