SPINACH QUICHE 
1 (10 oz.) pkg. frozen chopped spinach
1/2 lb. Swiss cheese, shredded
2 tbsp. all-purpose flour
4 lg. or 5 sm. eggs
1 c. skim milk
1/2 tsp. salt
1/8 tsp. pepper
Dash of ground nutmeg
Vegetable cooking spray

Cook spinach according to package directions, omitting salt; place on paper towels, and squeeze until barely moist. Set aside. Combine cheese and flour; set aside.

Combine eggs, milk, salt, pepper, and nutmeg; stir in spinach and cheese until well blended. Pour mixture into a 9-inch deep-dish pie plate coated with cooking spray; bake at 350 degrees for 55 to 60 minutes or until set. Let stand 5 to 10 minutes before serving. Yield: 8 servings (about 180 calories per serving).
