VEGETABLE QUICHE 
2 tbsp. oil
1 onion, thinly sliced
1 clove garlic, finely minced
1 green pepper, chopped
4 c. broccoli & cauliflower piece or spinach
4-6 eggs, beaten
2 c. grated sharp cheese
1/2 tsp. each of cumin & marjoram or crushed basil

Heat a skillet on medium heat. Add the oil and vegetables, saute lightly. Cover and steam vegetables in their own juice for 2 minutes. Fold in eggs, cheese and herbs. Pour in an oiled 1 1/2 or 2 quart baking dish. Bake 30-40 minutes at 325 degrees or until set.
