SPINACH QUICHE 
3 eggs, beaten
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
2 c. low-fat cottage cheese
1/4 c. grated Parmesan cheese
3 tbsp. shredded Swiss cheese
1/2 tsp. Dijon mustard
1/4 tsp. instant minced onion
1/4 tsp. dry mustard
1/4 tsp. red pepper
1/8 tsp. salt
Vegetable cooking spray

Combine first 10 ingredients; mix well. Pour into a 9 inch pie plate coated with cooking spray. Bake at 350 degrees for 35 to 40 minutes or until set. Yield: 6 servings (about 135 calories per serving).
