THUMBPRINT COOKIES 
1 c. butter
1 egg, separated
2 sq. unsweetened chocolate, melted
2 c. flour
Chopped pecans
1 c. sugar
1 tsp. vanilla
1/2 tsp. salt

Cream butter and sugar; add egg yolk, vanilla and melted chocolate. Combine flour and salt and add to creamed mixture. Form dough into balls, roll each into beaten egg white and dip each one in chopped pecans. Place balls on ungreased cookie sheets and press the center of each with your thumb. Bake at 350 degrees for 10 to 12 minutes. Fill with powdered sugar frosting which can be tinted to any holiday color you wish.
