GRANDMA JUSTINE'S SPINACH RING MOLD | |
3 c. frozen spinach, thawed, drained very well & finely chopped 1/2 lb. bacon, cut fine, sauteed to golden brown, drain fat 4 eggs 3 tbsp. butter 2 tbsp. (generous) Bisquick 1 c. (scant) evaporated milk 1/8 tsp. pepper Salt to taste Put chopped spinach in bowl; add sauteed bacon. Put remaining ingredients in blender. Pour blended mixture into the spinach and bacon mixture; mix well. Butter ring mold well. Put spinach mixture in ring mold. Put ring mold in larger pan; fill larger pan with water, about 1/4" lower than the top of the ring mold. Cover larger pan with tightly fitting cover or with tin foil. Simmer 30 minutes or until done. Test for doneness by inserting knife and checking if it comes out clean. Loosen spinach from ring mold with spatula. Turn onto plate and serve. NOTE: More or less spinach works well. |
