DATE PINWHEEL COOKIES 
1 c. white sugar
1 c. brown sugar
1 c. shortening
3 eggs, beaten
4 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla

FILLING:

1 lb. dates, chopped
1/2 c. sugar
1/2 c. water

Combine and cook filling until thick. Let cool before using.

Cream sugar and shortening. Add beaten eggs. Sift dry ingredients, add sugar mixture. Roll dough 1/2 inch thick. Spread with date mixture. Roll up. Let stand in refrigerator overnight. Bake in 375 degree oven for 12 to 15 minutes.
