1/2 c. butter 1/2 c. brown sugar 3/4 c. sugar 1/2 tsp. vanilla 1 egg 2 c. flour Dash of salt 1/4 tsp. baking soda 7 1/4 oz. pkg. pitted dates 1 c. chopped nuts Cream butter, add brown sugar, 1/2 cup sugar, vanilla, and egg. Beat until light. Add sifted dry ingredients. Chill until firm enough to roll. To make filling, cut dates into tiny pieces, and bring to a boil with remaining 1/4 cup sugar, dash of salt, and 1/3 cup water. Simmer for 5 minutes, stirring often. Add nuts and cool. Half dough and roll each half on floured wax paper into 9 x 12 inch rectangle. Spread filling, roll up lightly from end. Wrap in wax paper. Chill overnight. Slice 1/8 inch thick. Bake in 375 degree oven for 10 minutes. |
