TWICE-BAKED POTATOES 
4 baking potatoes
1/2 c. butter
1/2 c. dairy sour cream (or according to taste)
1/2 tsp. salt
Dash of pepper
Paprika

Cook pierced potatoes in microwave for 12 to 16 minutes. If potatoes feel firm, let stand to soften. (Do not overcook). Slice the top of each potato and remove centers with teaspoon. (Leave shells intact). Put centers in mixing bowl and add remaining ingredients, except paprika. Mix with electric mixer until smooth. Divide mixture evenly in shells, mounding if necessary. Place potatoes on plate and cook for 4 minutes more. Sprinkle with paprika.

Since microwave ovens vary in power, you may need to adjust your cooking time.
