CINNAMON PICKLES | |
2 gallons lg. cucumbers 2 c. white lime 2 gallons ice water 1 tbsp. alum 2-3 oz. red food coloring 1 c. white vinegar 10 c. sugar 2 c. vinegar 2 c. water 8 whole cinnamon sticks 6 to 8 oz. red hots Slice the cucumbers and remove seeds from center. Do not peel. Soak the cucumbers for 12-18 hours in the white lime and ice water, stirring occasionally. Rinse well. Soak 3 hours in cold water. Drain. Mix together the alum, food coloring, 1 cup white vinegar and enough water to cover the cucumbers. Simmer the cucumbers in this mixture for 2 hours. Drain and throw away red liquid. Mix remaining ingredients. Heat and pour over the cucumbers. Drain, saving the liquid. Reheat, pour over, and drain again. Reheat, pour over the cucumbers and pack in jars. Seal. (I process in boiling water bath for 10 minutes.) |
