RED CINNAMON PICKLES | |
2 gal. sliced cucumbers 1 1/2 c. lime 3 tbsp. alum 5 c. apple cider vinegar 1 bottle red food coloring 4 c. water 16 c. sugar 14 sticks cinnamon 4 oz. red hots Dissolve lime in water. Place cucumber slices in jar. Cover with water. Soak overnight. Wash well 3 or 4 times and soak in ice water 3 hours. Drain. Soak in alum, 1 cup vinegar, food coloring and water to cover. Soak for 3 hours. Drain. Bring 4 cups vinegar, 4 cups water, sugar, cinnamon sticks and red hots to a boil and pour over cucumbers. Reheat syrup everyday for 3 days. On the fourth day, heat syrup and cucumbers. Bring to a boil. Place in jars and seal. |
