CINNAMON PICKLES | |
2 gallon lg. cucumbers, measure after peeled and cutting into sticks, scoop out seeds. 1 (3 1/2 oz.) bottle red food coloring 4 c. white vinegar 4 c. water 1 (11 oz.) pkg. red hots 8 1/2 qt. cold water 2 c. lime 1 c. white vinegar 1 tbsp. alum 10 c. sugar 8 sticks cinnamon Soak cucumbers in lime water for 24 hours. Wash well to remove all lime. Soak sticks in cold water for 3 hours; drain. In a big kettle, mix vinegar, red food coloring, alum and enough hot water to cover sticks. Simmer slowly for 2 hours, uncovered. Drain off liquid (do not use again). Bring vinegar, sugar, water, cinnamon and red hots to boil. Pour over cucumber sticks; let set 24 hours. drain, bring liquid to boil and pour over cucumber sticks. Do this for 3 days. On 4th day, pack cucumbers in jars and fill with boiling syrup, seal. Process in hot water bath for 20 minutes. |
