CINNAMON PICKLES 
Peel 7 pounds cucumbers. Remove centers from cucumbers (plastic hair curlers work good for this). Soak in lime (1 gallon water, 1 bottle Lily lime) overnight. Rinse.

Mix together: 1 tbsp. alum 1 oz. bottle red food coloring Water to cover

Simmer for 2 hours. Drain liquid, throw away.

Mix together: 2 c. water 12 c. sugar 8 cinnamon sticks 4 c. cinnamon candy (7 - 5 1/4 oz. pkgs.)

Heat until candy melts - never boil - pour over rings and let set until next day.

Next 2 mornings drain - heat liquid and pour back over rings. Third day heat with rings and put in jars. Seal.
