CINNAMON PICKLES | |
3/4 bushel cucumbers, can be lg. cucumbers 2 c. lime 8 1/2 qt. water 1 c. vinegar 1 tbsp. alum 1 oz. red food coloring 2 c. vinegar 2 c. water 10 c. sugar 8 cinnamon sticks 6 oz. red hot candy Peel and remove seeds from cucumbers. Slice into small strips. Soak in 2 cups lime and 8 1/2 quarts water for 24 hours. Drain and rinse well! Simmer 2 hours in solution of 1 cup vinegar, 1 tablespoon alum, food coloring, plus enough water to cover. While cucumbers are cooking make syrup of the 2 cups vinegar, 2 cups water, 10 cups sugar, cinnamon sticks and candy. Drain cucumbers and pour syrup over them. Bring to a boil and simmer until thoroughly heated. Pack into sterilized jars. Makes 14 quarts. |
