APPLE RICE PUDDING | |
3 sm. apples, peeled and finely diced 1 1/2 c. cooked white rice 1/2 tsp. salt 1/4 tsp. nutmeg 1/2 tsp. vanilla 1 c. skim milk 1 tbsp. vegetable oil 8 dates, finely sliced 2 tbsp. sugar 3 eggs, separated In large bowl combine all ingredients except egg whites. Beat egg whites until stiff. Fold into apple-rice mixture. Pour into 1 1/2-quart baking dish. Place pan in hot water (about 1 inch deep). Bake at 325 degrees for 70 minutes. Makes 6 servings. (1 serving equals 188 calories.) |
