CORNISH HENS WITH APPLE - WALNUT
DRESSING
 
2 Cornish hens
Salt, pepper, and oil
1 c. wild rice, cooked
2 tbsp. chopped celery
2 tbsp. chopped onion
1/4 c. walnut pieces
1 apple, cored and chopped

Preheat oven to 350 degrees. Wash hens, pat dry, salt, and pepper them and rub lightly with oil. Combine the rest of ingredients and stuff hens. Place in uncovered pan and roast for 1 hour or until tender. Serve with green veggie and rolls.
