RED VELVET CAKE 
2 1/2 c. flour
1 1/2 c. sugar
1 tsp. cocoa
1 tsp. salt
1 tsp. baking soda
1 1/2 c. vegetable oil
1 c. buttermilk
2 eggs
1 tsp. vanilla
1 tsp. vinegar
1 bottle red food coloring

Mix oil and sugar; add eggs and vinegar. Combine flour, cocoa, salt and soda. Alternately add flour mixture and buttermilk, ending with flour. Add vanilla and red food coloring. Bake at 350 until done, approximately 30 minutes (clean toothpick test).

FROSTING:

8 oz. cream cheese (softened)
1 stick butter (softened)
1 c. chopped nuts
1 box powdered sugar
1 tsp. vanilla

Cream cheese and butter. Add powdered sugar, vanilla and chopped nuts.
