POTATO SALAD FOR A CROWD | |
1 (3 oz.) pkg. lemon Jell-O 1 1/2 c. boiling water 1 qt. Miracle Whip 1/2 c. sugar 1 tsp. salt 3 tbsp. yellow mustard 1 can evaporated milk 1/2 onion, chopped fine 5 - 6 lbs. potatoes 1 doz. eggs, boiled, cooled, peeled and chopped sweet pickle, celery, green onion (optional) Dissolve lemon Jell-O in boiling water. Cool to lukewarm, then add Miracle Whip. Add remaining ingredients and blend with wire whisk. Put in refrigerator to set. Boil potatoes with skins on. When cooled, peel and cube. Add eggs to potatoes and mix with dressing. Let set in refrigerator overnight. (I cut this recipe in half as it makes a large batch.) |
