CORNISH HEN STUFFED WITH WILD
RICE
 
3 cornish hen
1/2 c. wild rice
1 tbsp. butter
1/2 tsp. garlic salt
1/4 c. onion, chopped
1/2 c. fresh mushrooms, sliced or canned stem & pieces
3/4 c. chicken broth

Rub salt on hen and in cavity. Rinse and pat dry with paper towel. Brown rice in skillet with butter. Add garlic salt, onions and mushrooms. After onions are transparent, add chicken broth. Cook on medium to low heat uncovered until rice absorbs all liquid, but not too dry. Cover and simmer 5-10 minutes. Stuff hen with wild rice, brush hen with butter and sprinkle with salt and pepper. Baste frequently. Bake at 350 degrees for 1 hour or until hen is done.
