CORNISH HENS AND WILD RICE 
1/4 c. butter
1/2 c. chopped celery
4 oz. can sliced mushrooms, drained
3/4 c. white rice
3/4 c. wild rice
2 (1 3/8 oz.) pkg. onion soup mix
3 1/2 c. boiling water
4 Rock Cornish hens, halved
Salt

Saute celery, mushrooms until golden; add white rice and wild rice. Fry until golden. Spread on bottom of roasting pan. Mix onion soup with water; pour over rice mixture. Rub hens with soft butter. Roast 50 to 60 minutes at 450 degrees. Baste with liquid from pan.
