3 eggs
1 c. oil
2 c. sugar
3 c. flour
1 c. raisins
1 c. chopped nuts
2 c. chopped carrots
1 tsp. baking soda
1/4 c. candied cherries, sliced
2 tsp. vanilla
1 c. coconut
3 c. chopped apples

Mix sugar, eggs, oil, vanilla, flour, and soda. Mix well. This is a very stiff batter. Add raisins, nuts, carrots, cherries, coconut, and apples. Mix well with hands; bake at 350 degrees for 1 1/2 hours.

ICING:

1 stick butter
1/4 c. milk
1 c. brown sugar

Boil this for 4 minutes. Pour over cake while hot.
