HALUSKI (DUMPLINGS) 
2 med. sized potatoes, grated
2 c. flour
Salt
1 egg
Sauteed cabbage or butter and cottage cheese

Grate potatoes and add flour, salt and egg to make a soft dough. If needed, use some water. Spread out on plate and, using a knife, slip small pieces of dough into boiling water. The dough will rise to the surface. Boil 5 minutes. Remove from hot water, rinse with cold water and coat with either sauteed cabbage or butter and cottage cheese.

Versions of topping:

1. Chopped or sliced cabbage: saute in butter. Season with salt. Saute slowly, mixing as it slightly browns. If desired, saute chopped onion also.

2. Melt butter. Pour over dumplings or noodles. Add cottage cheese. If needed, warm slightly.

3. Saute onion, add drained and rinsed sauerkraut; cook together. Add to dumplings or noodles and season to taste.
