FRUIT PIZZA 
COOKIE CRUST:

1 c. butter
1 1/2 c. powdered sugar
1 egg
1 tsp. vanilla
1/4 tsp. almond flavoring
2 1/2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar

FILLING:

8 oz. cream cheese
1/3 c. powdered sugar

FRUIT:

1 (16 oz.) can sliced peaches
1 (12 oz.) can mandarin oranges
1 (16 oz.) can pineapple chunks
2 bananas
1 pt. fresh strawberries

GLAZE:

1 c. apricot preserves

Preheat oven to 375 degrees. Cream butter and sugar. Add egg, vanilla and almond flavoring and beat until light. Stir together flour, soda, and cream of tartar. Mix dry ingredients into sugar mixture to form soft dough. Chill. Roll out to fit 12 inch pizza pan. Bake 15minutes. Cool.

Mix cream cheese and powdered sugar and spread on cooled crust. Drain canned fruit and dry on paper towel. Slice bananas and strawberries. Arrange the fruit on top of cream cheese topping. Heat the apricot preserves and brush on the fruit as a glaze. (Any combination of fruit can be used - also can use commercial glaze purchased at store).
