LEMON TURKEY SALAD 
1/3 c. mayonnaise
1/3 c. sour cream
3/4 tsp. grated lemon peel
1 1/2 tsp. lemon juice
1/8 tsp. salt
Ground pepper to taste
1 lb. turkey cutlets, poached in chicken broth and diced
1 red apple, diced
1/2 c. chopped walnuts
1/2 c. thinly sliced celery

Mix first five ingredients; season with pepper. Add turkey, apple, walnuts and celery; toss well. Makes 4 servings.
