NORWEGIAN APPLE CAKE 
1 1/2 c. sugar
2 1/2 c. flour
2 sticks butter
2 tsp. baking powder (add to flour)
2 eggs
2 1/2-3 c. grated apples
3 tbsp. sugar
Cinnamon to taste

Mix sugar, flour and baking powder. Cut in butter (oleo) as you would for pie crust. Beat eggs and mix with dry ingredients; mixing will be crumbly. Spread half the dough in a round spring pan or cake pan, patting it in place.

Mix the peeled, grated apples with 3 tablespoons sugar and a sprinkle of cinnamon. Spread evenly over dough. Spoon remainder of dough over top of apples. Bake at 375 degrees for 50-60 minutes. Spread powdered sugar frosting on cake with a little nutmeg mixed in to improve the flavor.
