RATATOUILLE 
2 med. onions, sliced thin
2 med. green peppers, sliced thin
1 lg. clove garlic, minced
1 med. eggplant, peeled and cut into 1 inch cubes
2 med. zucchini, sliced
5 med. tomatoes, peeled and diced
1/4 c. fresh parsley, chopped
2 tsp. salt
2 tbsp. grated Parmesan cheese

Saute onions, peppers, and garlic until almost tender. Add all other ingredients except parsley and cheese. Cover and simmer 25 minutes or until crisp, but tender. Add parsley and cheese and cook another 5 minutes, stirring occasionally.
