SPICE CAKE (SLOP CAKE) | |
1 3/4 c. sifted flour 1 tsp. baking soda 1/2 tsp. salt 1 1/2 tsp. cinnamon 1 tsp. allspice (optional) 1 tsp. nutmeg 1/4 tsp. cloves (optional) 1/2 c. shortening, butter 1 c. sugar or 1/2 c. white + 1/2 c. brown sugar 1 egg 1 c. applesauce (or any other kind of fruit) Raisins and/or nuts as desired Sift flour, soda, salt and spices together three times. Cream shortening with sugar until fluffy. Add eggs and beat thoroughly. Add sifted dry ingredients and fruit alternately in small amounts, beating well. Bake in a greased 9"x13" pan. Bake at 350 degrees for 35 to 40 minutes. Top with brown sugar burnt icing. |
