SPLIT PEA SOUP 
1/2 lb. bacon or ham
2 1/2 c. dry split peas, cooked 2 hours in 2 quarts water
1 c. onion, chopped
1 tsp. garlic

Saute bacon until crisp. Add onions until transparent. Put in pot with peas adding the seasonings. Cook until peas are mushy. Make a sauce by combining: 1/2 c. flour 1 c. milk

Add to soup and garnish with parsley.
