GUILT-FREE MEATLOAF 
1/2 lb. lean ground beef
1/2 lb. ground turkey
1/2 lb. ground pork
3/4 c. chopped onions
3/4 c. chopped celery
1 1/2 tsp. butter
1 1/2 tsp. oil
2 lg. cloves garlic, minced
2 eggs
1 tbsp. Worcestershire sauce
1 tsp. soy sauce
1 tbsp. mustard
1 1/2 tsp. chili powder
1/2 tsp. thyme
1/2 tsp. pepper
1/2 tsp. salt
1 c. bread crumbs
1 tbsp. grated Parmesan cheese
1 can plum tomatoes, halved lengthwise, drained & seeded

Combine all meats, set aside. Saute onions and celery in oil and butter until just beginning to wilt. Combine with the meats. Stir together Worcestershire, soy, mustard, chili powder, thyme, salt and pepper. Pour over the meat mixture and combine.

Add bread crumbs and eggs. Put into loaf pan and bake for 30 minutes. Remove from oven and sprinkle top of the loaf with cheese. Bake for 15 minutes more. Sprinkle the tomato halves with 1 teaspoon soy sauce over the loaf overlapping to make an attractive pattern. Bake for 30 minutes longer for a total of 75 minutes. Serves 4 to 6.
