DUTCH SPLIT PEA SOUP 
1 lb. dried green split peas
6 c. water
4 c. chicken or beef broth
1/4 lb. smoked pork or ham (or turkey ham), diced
3/4 c. chopped celery
2 leeks (white part only), sliced thin
1 lg. onion, chopped (1 c.)
2 1/2 c. diced potatoes
1 1/2 c. diced carrots
1/2 tsp. salt
1/4 tsp. black pepper
5 squirts of Tabasco

Combine peas and water. Bring to boil, cooking for 2 minutes. Remove from heat, cover and let stand 1 hour. Add broth, pork, celery, leeks and onion. Bring to boil and simmer 1 1/2 hours.

Add potatoes, carrots and cook another 15-30 minutes. If soup gets too thick, add more broth. Season with salt, pepper and Tabasco.

Note: You can add all the ingredients to the soaked peas in a crock pot on high to cook all day.
