HEARTY SPLIT PEA SOUP 
1 (12 oz.) pkg. green split peas
5-6 c. water
1 ham hock or ham seasonings (plus meat) to taste
4 diced carrots
1 diced potato
1 tsp. celery seed
2 bay leaves
1 onion, diced
2 garlic cloves, minced
Salt & pepper to taste

Rinse peas. Place all ingredients in large, covered pot of boiling water. Simmer for approximately 2 hours or until thickened. To serve, top with dollop of sour cream if desired. Yield: About 8 servings.
