TEX - MEX CHICKEN 
1 lg. chicken, boiled, boned, cut into bite-size pieces
1 dozen tortillas, thawed and torn into pieces
3 green onions, chopped
1 c. grated American cheese
1 bell pepper, chopped
2 cloves garlic, minced
1 can cream of chicken soup
1 can mushroom soup
1 can Rotel tomatoes with green chilies
1 c. stock from cooking chicken
2 tsp. chili powder
Salt to taste
Pepper to taste

Mix together cream of chicken soup, mushroom soup, Rotel tomatoes, chicken stock, chili powder, salt and pepper.

Put in a large casserole dish a layer of chicken, a layer of tortillas, then onions, bell pepper and cheese; cover with sauce. Repeat with another layer of each, ending with cheese. Bake 45-60 minutes at 350 degrees. Serves 6-8.
