ITALIAN CHICKEN AND RICE 
1 1/2 c. water
1 c. uncooked rice
1 (14 1/2 oz.) can stewed tomatoes
1/2 lb. Velveeta cheese, diced
1/4 c. chopped onion
1 1/2 tsp. Italian seasoning
2 1/2 - 3 lbs. chicken, cut up & skinned
2/3 c. Parmesan cheese

Preheat oven to 375 degrees. Stir together water, rice, tomatoes, cheese, onion and 1 teaspoon of the Italian seasoning and pour into a greased 13"x9" dish. Place cut up chicken on top of the above mixture; sprinkle with Parmesan cheese and the remaining 1/2 teaspoon of the Italian seasoning. Bake 45 to 50 minutes or until tender. Let stand approximately 5 minutes. Serves 4 to 6 servings.
