ITALIAN RICE PIE 
CRUST:

1/2 c. Crisco
2 eggs
2 c. flour
1 tsp. baking powder
Pinch of salt
1/4 c. sugar

FILLING:

1/2 c. uncooked rice
1 lb. Ricotta cheese
1 c. sugar
4 eggs
1 tsp. vanilla

FOR CRUST: Cream sugar and Crisco, add eggs and dry ingredients. Roll out like pie crust. Put in 9 inch pie plate.

FOR FILLING: Mix all ingredients together. Pour into pie shell. Bake at 350 degrees for 1 hour.

My family recipe is similar, we add 1 cup of heavy cream to the filling ingredients.
