PERSIMMON BARS | |
1 c. persimmon pulp 1 1/2 tsp. lemon juice 1 tsp. baking soda 1 egg 1 c. sugar 1/2 c. oil 8 oz. chopped dates 1 3/4 c. flour 1 tsp. salt 1 tsp. cinnamon 1/4 tsp. cloves 1 c. chopped nuts Mix pulp with soda. Set aside. Combine all the remaining ingredients. Add to pulp and soda. Butter and flour a 9 x 13 Pyrex dish. Spread bars in dish. Bake at 350 degrees for 25 minutes. Cool 5 minutes before cutting into bars. You may put a dollop of whipping cream on each serving, if desired. |
