PERSIMMON COOKIES 
1 c. persimmon pulp (can use pumpkin, applesauce, or mincemeat)
1 c. sugar
2 c. flour
1 c. chopped nuts of your choice
1 c. raisins
1/2 c. shortening
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
1 egg, beaten

Beat pulp, soda, sugar and shortening until creamy. Add flour, egg, and sifted spices, nuts, and raisins. Stir until well blended. Drop by tablespoonful on greased cookie sheet.

Bake at 375 degrees for 12-15 minutes. Yields 4 1/2 to 5 dozen.
