MOTHER'S BUTTERMILK PIE
FILLING (for 2 pies) :
3 c. sugar
6 tbsp. flour
1 1/2 c. buttermilk
5 eggs
1 c. butter (2 sticks, melted)
2 tsp. vanilla

Mix sugar, flour, 1/2 of milk; add beaten eggs. Add last of milk and fold in melted butter. Add vanilla; pour in unbaked pie shells (2) and bake at 425 degrees for 10 minutes. Then turn over to 350 degrees and bake until knife comes out clean.

CRUST (Makes 2 pie shells) :
1 tsp. salt
2 c. flour (room temperature)
2/3 c. shortening (cold)
5-6 tbsp. ice cold water

Sift flour and salt. Cut shortening into flour until size of peas. Add water 1 tablespoon at a time, mixing lightly with fork. Use only enough water to hold it together. Handle as little as possible. If it breaks when rolling, patch in pan with a little water to seal. (No one looks at the bottom of a pie crust!)
