BUTTERMILK COCONUT PIE 
1 stick butter
1 3/4 c. sugar
4 eggs
3/4 c. buttermilk
2 c. coconut
1 tsp. vanilla
1/4 tsp. salt

Melt butter, mix in sugar; beat well. Mix 4 eggs well beaten, add vanilla, buttermilk and salt. Mix well. Add coconut last to mixture. Put 1 cup coconut in bottom of pie shell. Pour mixture in pie shell and bake at 350 degrees for 1 hour.
